古早味粽、鹼粽、客家粄粽藏身竹市市場 在地私藏名單看你「粽」意哪一味

端午節將至,民俗以吃粽子過節,新竹市長林智堅指出,新竹是歷史300年的古城,閩南、客家、眷村等移民匯聚於此,也因此發展出隱藏在各大市場的各式特色粽,包括北部粽、客家粄粽、眷村甜粽等,滿足不同客群的胃,新竹市也與在地名店傻瓜肉粽合作,推出市府伴手禮助行銷,本次特別公布在地好粽私藏名單,邀民眾來細細品嘗。
新竹市政府與在地商家合作推出伴手禮評比,讓特色商品呈現新竹美食,2010年十大伴手禮之一傻瓜肉粽,特色為低油、低盬、不加味精,還販售以五穀米為基底的養生粽,吃粽也能好健康,也有素肉粽以紅藜包覆猴頭菇。
 
竹市各大傳統市場也有著藏有許多特色肉粽,新竹市政府指出,新竹市肉粽很多元,不僅有「蒸煮」傳統北部粽,還有「米漿」製成的粄粽,更有受眷村喜愛的甜粽,各類粽子更加入創新手法,包括中央市場104號攤結合北、南口味的肉粽,南寮市場田媽媽手作、加入南瓜的黃金粄粽。
中央市場104號頂好滷味便當第二代老闆林傳傑說,他在飯店餐飲工作達10年,回來接手媽媽便當店,就把真材實料、精緻料理概念融入其中,以前肉粽都是傳統北部肉粽,直到某次一位常客台中11歲妹妹來到攤位,向他哭訴,104號肉粽最像已經離世的阿嬤口味,唯一不同就是阿嬤有包花生,請他幫忙客製化幾個有花生的傳統肉粽,從此結合南北口味的南北粽就此誕生。
中央市場104號肉粽廣受好評,端午將至,攤販總是大排長龍,更有高雄客人特地預訂宅配逾百顆,林傳傑說,客人除了被南北粽特色吸引,主要還是肉粽料多實在,內餡就有五花肉、梅花肉兩塊,還有手切菜脯、大顆花生。
另外,南寮市場田媽媽粄粽販售「閩、客」結合的粄粽,田媽媽肉粽老闆娘劉明珠說,夫家是傳統豬肉攤,自她才開始加工販售閩南的菜包,某次端午將近,她就改良推出「閩、客」結合粄粽,沒想到大受歡迎,她的粄粽保留以米漿蒸煮而成客家粄粽外皮,再拌入糖,內餡則是閩南粽肉塊、香菇等,打造外皮彈牙、內餡又有嚼勁的獨特粄粽。
田媽媽粄粽美味口耳相傳,不僅熱銷還成為新竹在地企業指定的端午伴手禮,劉明珠說,粄粽費工費時,在竹市很少見,他們還販售外皮加入南瓜的「黃金粽」,還有外皮加入鼠蹊草的「綠粄粽」,南瓜、鼠蹊草都使粄粽更加彈牙,粄粽兼具視覺、味覺,內餡包入梅花肉、鈕扣菇、兩種菜脯,客人嘗過都讚不絕口。
 
除此之外,士林市場是販售古早味鹼粽,其中紅豆口味,不過度甜膩,吸引許多死忠眷村顧客,每年都會回購。
